Japchae

Korean Bapsang Recipe
Ingredients:

1 Pack of Dangmyun Noodles
-
1 Small Carrot
-
1 Small White Onion
-
2 Green Onion
-
1 Pack of Beef
-
5 Shittake Mushrooms
-
1 Handful of Spinach
-
1 Pinch of Salt
-
1 Pinch of Pepper
-
3 Tablespoon of Soy Sauce
-
2 1/2 Tablespoon of Sugar
-
2 Tablespoon of Sesame Oil
-
2 Teaspoon of Minced Garlic
-
2 Teaspoon of Roasted Sesame Seed

Instructions:

In a bowl, add the Soy Sauce, Sugar, Sesame Oil, Garlic and Sesame seed.

Mix all the ingredients well until the Sugar dissolves to create a Sauce.

Soak the Mushroom in water until plump.

Cut the Carrot into thin strips, the Onion into thin slices, and the Green Onion into similar size pieces.

Cut the Beef into long strips and mix it with 1 Tablespoon of the Sauce and leave it to marinate.

Cut the the stem off the Mushroom and slice them into thin stripes, then season with 1 Tablespoon of the Sauce.

Blanch the Spinach in Boiling Water until it wilted, drain it quickly then soak it into Cold Water and squeeze to remove excess Water. Then cut into bite size and season it with Salt and Pepper.

Bring a Pot of Boiling Water and cook the Noodles for about 7 minutes. Then rinse in Cold Water and drain. cut the Noodles with a Knife or Kitchen Scissors.

In a large bowl, add the Noodles and 2 Tablespoons of the Sauce and mix well.

In a large Nonstick Pan, stir-fry the Noodles over medium heat. Keep stirring until the Noodles are transparent and a bit sticky then transfer back to the bowl.

Add about 1/2 Tablespoon of Vegetable Oil in the Pan and stir fry the Onion over medium heat and sprinkle a little bit of alt and Pepper.

When the Onion is almost done add the Green Onion and stir briefly then transfer to the bowl with the Noodles.

Stir-fry the Carrot for about 1 to 2 minuets until it’s soft then transfer it to the bowl of Noodles.

Stir-fry the Beef and Mushrooms together until the Meat is fully cooked then transfer to the bowl.

Add the Beef, Spinach and the remaining sauce to Noodles bowl and mix well by hand.

You can adjust the seasoning by adding 1/2 Teaspoon of Soy Sauce and/or Sugar.

The Japchae is ready and you can server it in a nice deep bowl.
